You’ve heard it a million times before: Opposites attract. According to Psychology Today:
“Opposites, or perhaps more accurately, “complements” do attract. Introverts and extroverts, morning people and night people, impulsives and planners…there’s no denying that something in us is drawn to people who counter some of our dominant inclinations with complementary tendencies. And while this can create some interesting challenges, these differences are actually the source of the most important aspect of any successful relationship: chemistry.”
That type of chemistry makes food fun and exciting! This salsa recipe combines the heat of jalapeños, the sweet of mango, the tang of lime, and the warmth of roasted garlic.
Even though salsa is great with chips, try it as salad dressing, put it on a grilled cheese sandwich, add to meatloaf, or top scrambled eggs. Yum!
When you dice the tomatoes, put them in the colander so some of the liquid can drain away.
Since the intense heat resides in the seeds and ribs of peppers, I usually scrape them out with a spoon. That also means I can put in extra peppers in without scorching my tongue.
Use as many colours as possible in this salsa. When tomato season is closer, I like adding purple tomatoes along with red and yellow. Orange mangoes, brilliant green jalapeños and cilantro, and it’s a party! Yay!

Ingredients
- 5–6 tomatoes of various colours
- 1–2 jalapeños, ribs and seeds removed and finely diced
- A large bunch of cilantro, chopped
- 3 green onions, chopped
- 1 mango, diced
- 4–5 cloves roasted garlic
- 1 lime, juiced
- A large pinch of salt
Instructions
- Dice tomatoes and allow to drip in a colander for a few minutes.
- In a medium sized bowl, gently stir all the ingredients together
- Test the salsa with the chips you are going to serve it with — some chips are super salty, so you don’t need to season as much
