I don’t like surprises. At least most of the time. Practical jokes, pranks, surprise parties – not my deal. But this dish was a very, VERY pleasant surprise. Chicken and garlic are always a good idea, but this brought the basics to an off-the-charts level.
I picked up 3 very large, DD-sized chicken breasts at the store, and cut each one in half. Face it, none of us really need to eat that much meat! Besides, baking something that large raises the risks of drying the meat out, just in order to reach a safe internal temperature.
This chicken was unbelievably moist, full of incredible flavour, and perfect in every way.
Preheat the oven to 425 degrees.
Pat the chicken breast halves dry with a paper towel, then season generously with salt and pepper.
Rub garlic scape hummus all over the meat. If you want a crusty topping to the chicken, just use a little hummus. If you want extra flavour and moistness, be pretty generous. (I used about 1 cup hummus for the 6 pieces of meat because I’m a flavour-junky over contrasting-texture-obsessed.)
This creamy, garlicky hummus is my new addiction.
Bake for 20 minutes. Check the temperature of the chicken. Depending on how thick the breasts are, they might need another 5 minutes or so. Remember that your goal is to reach 165 degrees, but also know that if your instant-read thermometer is close to that number, the meat will continue to cook while it rests on the counter.
Let the chicken stand for 5 minutes before serving with brown rice.

- Rub hummus all over each piece, and place in a greased oven-safe dish
- Bake for 20 minutes before checking temperature of chicken (depending on the thickness of the meat, it may need another 5 minutes)
- Once the temp nears 165 degrees, remove from the oven and allow to stand for 5 minutes before serving with brown rice
