Buttermilk Waffles

I love antiques, vintage items, primitives, heirlooms, collectibles — whatever you want to call them. Anything that has seen life, and has been part of a story, finds a special place in my home. However, I am not an antiques collector. For the most part, I would rather have something new that comes with a great story than some old thing that I know nothing about.

As I was meeting with designers, drafters, and decorators in preparation for building our house, one question I heard repeatedly was, “What style do you want your house? Craftsman? Farmhouse? Modern???” My answer was always, “YES!!!” As a result, our house has beautiful antiques, historical primitives, and family heirlooms – right next to IKEA finds.

And that makes me happy.

Growing up, Sunday evening was waffle night. Mom would set out the good dishes on the dining room table, and we would eat waffles with either peanut butter and homemade syrup, or vanilla ice cream and strawberries. What a treat! And so many great memories.

Mom’s waffle iron has it’s own great story:

My grandma’s brother, Gerhard, whom I don’t recall ever meeting, was famous for his waffles. At some point, his waffle iron was handed down to family members that didn’t want/need it. SO, my mom took pity on the well-used appliance some time in the early 1960’s, and gave it a new home and a new family. Mom passed it on to me about 20 years ago. She is a real beauty!

DSC04639With her perforated pedestal and fabric-wrapped cord, this waffle iron works hard and dependably, with a style all her own.

My waffle recipe is adapted from Great-Uncle Gerhard’s original recipe, which was printed in the Helmar Lutheran Church cookbook. This is sized for a family (with leftovers to freeze and pop in the toaster for rushed mornings), and uses my gluten free flour mix. Any gluten free flour blend works fine, but I prefer my own. The waffles are light and fluffy, and this old waffle iron makes the outside just the tiniest bit crispy. Perfect!

The batter also makes amazing pancakes.

Buttermilk Waffles

Light, fluffy, crispy, and delicious gluten free waffles


Ingredients

Scale
  • 4 cups gluten free flour blend
  • 6 Tbsp sugar
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 6 eggs
  • 1 quart buttermilk
  • 3/4 cup coconut oil, melted

Instructions

  1. Bring all ingredients to room temperature. In a large bowl, whisk together dry ingredients.
  2. Add eggs and buttermilk. Stir just until moistened (there will be lumps).
  3. Gently stir in melted oil.
  4. Bake in waffle iron or on a griddle as pancakes.

Notes

Cool waffles on racks, then freeze in bags, for toaster waffles.
