Breakfast Sausage Patties

I hope to never stop learning — life truly isn’t worth living once you stop gaining knowledge, skills, or even trivial information. What have you been learning recently?

This is something I learned from my younger sister while visiting her in Alaska recently. She purchases seasoned pork, makes patties, browns them, then freezes for future use. Duh!!! Why didn’t I think of that??? It’s a great way to add protein to a quick meal, whether it’s breakfast or BFD (Breakfast For Dinner), or anything in between. I don’t happen to have a Three Bears butcher shop near me, so I season the pork myself, then pat myself on the back for all the great things I’ve learned today.

Once the seasonings are all ground and combined, use your hands to thoroughly mix them with the pork. I have to admit that this makes me cringe a little — cold meat on my piano-playing hands just grosses me out — but the spices really need to be mixed in well.

Make small patties that aren’t too thick — I make about 8 from a pound of pork. That way, we get two sausage patties for each meal, and feel like we are being spoiled with so much deliciousness.

Brown the patties in a frying pan until they reach 150 degrees, remove from the pan so they can continue cooking — without drying out — and allow to drain on paper towels. Freeze the patties, separated by strips of waxed paper, so you can take any number out of the freezer. Defrost and heat in the microwave — it goes quickly!

Another option is to brown the sausage while breaking into crumbles. Once drained on paper towels, spread the pork out on a pan and freeze. Scoop the little nuggets of pork into freezer bags to add to omelettes or sprinkle on pizza.

Breakfast Sausage Patties

Ingredients

Scale

1# ground pork sausage

1 large clove garlic, minced

1 tsp rubbed sage

3/4 tsp salt

1/2 tsp black pepper

1/2 tsp fennel

1/2 tsp thyme

1/4 tsp marjoram

1/4 tsp red pepper flakes

1/4 tsp paprika

1/8 tsp ground cloves


Instructions

Grind the fennel and pepper flakes in a mortar with pestle, or spice grinder. Then combine with all the other spices. Mix into the pork with your hands, then form into small patties.

Cook in frying pan until they reach 150 degrees. Remove from pan to a plate lined with paper towels so it can rest and continue to cook.

Freeze leftovers separated with a strip of waxed paper. Then thaw and reheat in the microwave.

Notes

Small patties freeze easily after they are fried for a quick reheat.
