Tequila has been around for hundreds of years — much longer than Mexico has been an independent country. Although I’ve visited several parts of the country, I have yet to see a worm crawling around in a bottle of tequila, which is totally okay with me!
There is something so fun about learning from my kids. They each have an incredible pool of wisdom and knowledge in different subjects. One of the things Kristina excels at is cooking – her creativity, boldness, and skill blows my mind! But she also knows way more about cocktails than her mom. 😊 This spritzer is simple, refreshing, easy to make, and everyone loves it. Perfect for summertime!
I’m not a fan of doing shots – in fact, I think most hard liquors taste like lighter fluid – BUT there are times when they compliment other ingredients in a drink, and make it even better.
And then there’s lime juice……. Lime juice makes everything wonderful, fresh, and sparkly.
May I introduce you to another member of our family? Mr. Penguin – our friendly butler. I mean water-charger.
- His beak is the lever for charging with CO2.
- His eyes are the release for exchanging the CO2 cartridge.
- His cute little tummy hides the bottle of water.
And everything he makes is bubbly, sparkling, and filled with giggles. Okay. I may be exaggerating a little there, but carbonated water tickles my nose.
This spritzer is tangy – no sugar or simple syrup – but because of that, it’s also very light and ridiculously refreshing.
Rub half a lime on the rim of each glass, then dip into kosher salt that you’ve sprinkled on a plate. Fill the glasses with ice.
For each serving, squeeze the juice from an entire lime into the glass, add 1 ounce of tequila, and fill to the top with sparkling water – either home-charged with something like Mr. Penguin, or Perrier. Stir, and serve.
