Using the pressure cooker to bake potatoes is quick, easy, and makes for light and fluffy insides. After scrubbing the potatoes and poking them with a knife, just put them into a steamer basket above a cup or so of water. I like to throw in some garlic cloves, still in their jackets. The garlic steams into a soft and gooey glob that can be squeezed into the potato for an extra treat.

- 4 large russet potatoes

- 1 cup water
Instructions
- Pour 1 cup water into the pressure cooker.
- Set steamer basket in place. Add potatoes and garlic cloves.
- Cook on high for 20 minutes.
- Allow pressure to release naturally.
