I love making seasoning blends from scratch – curry powder, taco seasoning, you name it. Maybe it’s a control issue, a little defiance against over-priced packaging from the store, or the fact that I don’t plan far enough in advance to know every ingredient for my menu. Either way, custom-mixed seasoning blends are the way to go.
You can either choose to make a small batch, or larger to keep in the pantry. Seriously, no dried herbs are “fresh”. That’s why they last so long. I’m lazy enough to want this on hand now, so I make plenty of it at one time. The key to freshen herbs up is to rub them between your palms for a few seconds before adding to the recipe. Or use your mortar and pestle to wake them up.
