An oil-free way to serve savory potatoes
Ingredients

- 2–3 pounds red potatoes
- 1 tsp dried dill
- 1 tsp marjoram
- 1 tsp garlic powder
- 1 tsp thyme
- 1 tsp parsley
- 1 tsp salt
- 1/2 tsp oregano
Instructions
- Preheat oven to 400 degrees
- Scrub potatoes and cut into quarters, or equal sized pieces
- Boil in a large saucepan for 8 minutes
- While potatoes are boiling, combine all the spices in a large bowl and set aside
- Drain potatoes and transfer to bowl with seasonings, immediately gently tossing until all the pieces are coated
- Place potatoes on parchment paper-lined baking sheet and roast for 20 minutes
- Stir potatoes around, and return to oven for another 10 minutes
Notes
Once potatoes are drained, don’t allow them to steam dry, as you would for mashing. Potatoes need to be damp in order for herbs to cling.
