Description

A color, taste, and texture party made with humble green beans


Ingredients

Scale
  • Green beans – 2 steamer bags, or 6 cups fresh beans trimmed
  • 1 shallot, finely diced
  • 1 Tbsp olive oil
  • 3 Tbsp pure maple syrup
  • 2 Tbsp light rum
  • 1/4 tsp ginger
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup chopped dried tart cherries
  • 1/4 cup chopped pecans

Instructions

  1. Clean green beans, cutting to desired size
  2. Sauté finely chopped shallot in olive oil
  3. Stir in the syrup, rum, ginger, salt and pepper, let it simmer for a few minutes to reduce
  4. Steam green beans in steamer basket on the stove, or in microwave, for about 5 minutes
  5. Toss beans and glaze together with cherries and pecans
