There are very few veggie dishes that make me dance with delight. This is not only simple, but has incredible texture and flavour contrasts that will make your tongue sing some crazy song.
‘Tis the season for green beans, but this flavor/texture combination will always be in season. The ingredient list is simple, but putting them together makes these beans so incredible that you will take seconds. And thirds.
Think of this: maple syrup and pecans are already best friends. Crunchy beans and chewy tart cherries have just been introduced, and their friendship will last a long, long time. Add a little rum to the mixture and — 🎶
Clean the green beans, snapping off the ends and cutting into the size pieces you want.
Chop a shallot into small pieces and sauté in olive oil until tender. Then add maple syrup, rum, ginger, and salt and pepper. Let all of this cook together for a couple minutes, reducing it by half.
While that is cooking, steam the green beans – either in a steamer basket on the stove, or if you happen to have the kind that comes in a steam-bag, just use the microwave. It only takes about 5 minutes for them to get tender-crisp and bright green.
Toss together the beans and glaze. Stir in chopped dried tart cherrie and chopped pecans. Serve immediately, but first, clear the dance floor. There will be more than one person dancing during dinner!

- Green beans – 2 steamer bags, or 6 cups fresh beans trimmed
- 1 shallot, finely diced
- 1 Tbsp olive oil
- 3 Tbsp pure maple syrup
- 2 Tbsp light rum
- 1/4 tsp ginger
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 cup chopped dried tart cherries
- 1/4 cup chopped pecans
Instructions
- Clean green beans, cutting to desired size
- Sauté finely chopped shallot in olive oil
- Stir in the syrup, rum, ginger, salt and pepper, let it simmer for a few minutes to reduce
- Steam green beans in steamer basket on the stove, or in microwave, for about 5 minutes
- Toss beans and glaze together with cherries and pecans

I love this bowl – it is part of a set my grandparents received as wedding gift in 1930. Grandma didn’t like the bowls because of how heavy they are, so when I received them some 20 years ago, they were basically unused. Even though bowls like this are frequently found in antique stores, I use my set frequently, and found they don’t mind the dishwasher.
The little doily underneath was something we found in Grandma’s things.
