Hot and spicy, and oh so tasty!
Ingredients

- 1 large onion, chopped
- 4 carrots, diced
- 4 parsnips, peeled and diced
- 1 pound package spicy/hot italian sausage links, split down the middle and cut into bit-sized pieces
- 1 pound (or 2 1/2 cups) dry white/navy beans, soaked
- 2 tsp Italian seasoning
- 1 tsp hot sauce
- 4 cups chicken broth
- 1/2 to 1 cup white wine
- 1 pint cherry tomatoes, halved
- 2 large leaves kale, rinsed and stripped from tough stems and chopped
Instructions
- Pour boiling water over beans, and allow them to soak for an hour, or so.
- While the beans are soaking, prepare vegetables and sausage.
- Drain and rinse the beans.
- Put sausage, onion, carrots, parsnips, beans, italian seasoning, hot sauce, and chicken broth into the pressure cooker. Add white wine, up to 1 cup, so ingredients are just covered.
- Seal the pressure cooker, and set for 12 minuts on high.
- Release the steam. Stir in the kale and tomatoes.
- Set pressure cooker for 3 minutes on high. Allow steam to release naturally – about 15 minutes.
- Stir well, and serve.
