I should have been a boy scout. As the middle of 3 girls, I considered myself a tomboy. Of course, life wasn’t very rough and rugged while we flitted from music lesson to art course to language class, even though I could play a mean game of kickball. But I still live by the boy scout motto: BE PREPARED.
I like to be prepared. For basically anything. Our house is never without a huge stash of toilet paper and tissues. The car is never lower than 1/4 tank gas. Laundry is done before the hamper is more than halfway full. And the pantry and freezer are stocked with enough food to serve a small army for a month.
I try to have something on hand should company stay into the dinner hour, or someone shows up for coffee and a treat. That’s when these little jars of brownie mix come in so handy.
I cannot justify paying the $7 plus for a gluten free brownie mix, especially when the ingredients for an 8×8 pan of brownies costs less than a dollar. Using a homemade gluten free flour mix makes this quick and simple.
When ready to make brownies, just dump the contents into a bowl, whisk those dry ingredients around, then add the liquids. I use coconut oil because it makes the brownies extra moist, and mini chocolate chips are a perfect addition.
Take 10 minutes to mix up several of these mixes, and always be prepared for a sweet treat.

Ingredients
- 1/2 cup gluten free flour mix
- 1/2 cup cocoa
- 3/4 cup sugar
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 cup mini chocolate chips
- 1/2 cup coconut oil, melted
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees.
- Whisk dry ingredients together.
- Add eggs, oil and vanilla, stirring well.
- Spread batter into a greased 8×8″ pan.
- Bake for 25 minutes.
