Better than bottled — easy to make, and so delicious!


Ingredients

Scale
  • 1 cup ginger, peeled and finely chopped
  • 3 cups water
  • 1 cup sugar
  • 1 cup water
  • Sparkling water
  • Lime wedges

Instructions

  1. Peel and finely chop ginger. Add 3 cups of water, and simmer 5 minutes. Allow to stand and steep at least one hour before straining.
  2. Make simple syrup by boiling equal amounts sugar and water until sugar is dissolved.
  3. Combine the two syrups once they have cooled, and refrigerate up to a week.
  4. Put ice in glasses, fill halfway with ginger syrup and top off with sparkling water. Adjust according to taste.
  5. Squirt some lime juice in each glass, and serve with additional lime wedges.
