Ingredients

- 1 cup ginger, peeled and finely chopped
- 3 cups water
- 1 cup sugar
- 1 cup water
- Sparkling water
- Lime wedges
Instructions
- Peel and finely chop ginger. Add 3 cups of water, and simmer 5 minutes. Allow to stand and steep at least one hour before straining.
- Make simple syrup by boiling equal amounts sugar and water until sugar is dissolved.
- Combine the two syrups once they have cooled, and refrigerate up to a week.
- Put ice in glasses, fill halfway with ginger syrup and top off with sparkling water. Adjust according to taste.
- Squirt some lime juice in each glass, and serve with additional lime wedges.
