There are some things I love about food blogs: the writing is captivating, the photography is stunning and can cause me to wipe drool from my chin, and the recipes creatively use ingredients in new and unusual ways. But let’s get real here! That is not the way I cook on a daily basis. Nor is it the way my family wants to eat regularly. Seriously! Pickle Brine Chicken Tortilla Soup???
We can be completely honest here —-
Sometimes all we really want is an easy, quick, and tasty sandwich to satisfy our hunger, and that reminds us of growing up. Right?
Please tell me I’m not the only 50-something food blogger around who has fond memories of simple meals.
This is something I served to my family when the kids were younger, and it has stuck. At least with one child. 🙂
While our son was living a thousand miles from home, he would make these sandwiches regularly. Even with his crazy work schedule, these whip together quickly — and use ingredients that always seem to be on hand.
Seriously! Less than 10 minutes from start to finish! Anyone can handle that. And with some seriously yummy multi-grain gluten free buns on the market, it’s a fun treat.
PrintEasy Broiled Tuna Melts
- Total Time: 7 minutes
- Yield: 4 1x
Description
Quick and easy, with ingredients from the fridge and pantry. A perennial favorite with our family.
Ingredients
- 2 – 12 ounce cans tuna packed in water, drained and flaked
- 1/2 cup real mayonnaise
- 1/4 cup very finely chopped celery
- 1/4 tsp celery salt
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 cup grated cheddar cheese
- 4 large hamburger buns
Instructions
- Combine the mayonnaise with the celery salt, salt, and pepper, making sure it is well combined, then stir in the flaked tuna, finely chopped celery, and grated cheese.
- Slice the buns in half, and place on a rimmed baking sheet. Divide the tuna mixture among the buns, (use additional buns, if you cannot get the jumbo sized) Top with additional cheese, if desired.
- Preheat broiler – mine only takes about 3 minutes to preheat. If you have hi and lo broiler temperatures, use the low setting.
- Put the pan on the highest rack, or about 4-6 inches from the broiler element. Broil until the topping is bubbling and the cheese is melty. Watch carefully! These can go from just beginning to bubble to scorched in just seconds.
- Serve immediately.
Notes
Schär makes the most incredible gluten free ciabatta rolls. Split in half, topped with this tuna mixture, and broiled for a few minutes is absolute heaven.
