- 3 chicken breasts, cut into bite-sized pieces
- 1 head bok choy, chopped
- 1 red onion, thinly sliced
- 1 butternut squash, cut into bite-sized cubes
- 1/4 cup chicken broth (or water)
- 2 Tbsp coconut oil
- 2 Tbsp capers
- 1 tsp cumin
- 1/2 tsp turmeric
- 1/4 tsp ginger
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Combine the salt and pepper, and toss with the chicken pieces . Cook in a large skillet over medium heat until chicken is most of the way done (still a little pink on the inside). Add the cumin, turmeric, and ginger, tossing to coat every piece of chicken.
- Add the onion and squash pieces to the skillet and cook until tender, and chicken is thoroughly cooked.
- Add the broth or water and the bok choy. Cover the skillet and allow to steam for a couple minutes.
- Stir in the capers and heat through.
- Check seasoning, and serve.
