I love playing in the band at church. The talent on the platform each Sunday is enough to blow my mind, and we have a blast together. The only drawback is the crazy-early rehearsals.

Midwestern Teriyaki Chicken
Maybe Midwesterners have a reputation for bland food, but it’s totally not the truth. We love spicy food! This is not a Japanese teriyaki because I don’t usually have “sake” or “mirin” in the house. But there’s always Svedka vodka!
Oven Roasted Herbed Potatoes
There is something special about red potatoes. I’m not exactly sure why, but it probably has to do with the many summers I spent in Sweden eating this staple.
Easy Honey Glazed Chicken Thighs
In all honesty, EASY doesn’t matter if it doesn’t taste amazing! Period.
Wild Rice Soup
Every restaurant seems to have a signature dish. Grandma’s restaurant in Duluth, MN is famous for their wild rice soup.
Irish Stew
I would like to claim “Honorary Irish Blood”. Even though my dad’s parents were born and raised in Sweden and Mom’s family is Norwegian through and through, when I visited Ireland, it fit like the most perfect LBD.
Roasted Vegetable Red Sauce
I am a “No New Year’s Resolutions” kind of gal. I don’t like the feeling of defeat when, only a few days into the year, I’ve already failed to improve myself. Maybe you are like me – just trying to live healthier and give more.
Turkey Breast with Fennel Spice Rub
What makes weekend meals so special? Usually we take a little extra time to prepare the food, and we tend to linger around the table. In a perfect world, that would be every meal!
Baked Country Style Ribs
There are days when I cannot be in the kitchen — too much work to do, preferring to read a book instead, or making the choice to visit with company outdoors instead of hanging out in the kitchen.
Beef & Vegetable Soup
I have to laugh at the soup commercials with a customer calling the soup kitchen via a can on a string. How many played “walkie talkie” that way as children? I know I did!
