There are some things I love about food blogs: the writing is captivating, the photography is stunning and can cause me to wipe drool from my chin, and the recipes creatively use ingredients in new and unusual ways. But let’s get real here! That is not the way I cook on a daily basis. Nor is it the way my family wants to eat regularly. Seriously! Pickle Brine Chicken Tortilla Soup???

Curry, Chicken & Wild Rice Salad
Spring has arrived in Minnesota, which makes me crave salads, grilling, long leisurely evenings by the lake, and s’mores.
Tomato Salad
One of the most beautiful cities in the world is Trondheim, Norway. For a city founded more than a thousand years ago, it is a very happening place.
Chicken, Artichoke, and Cannellini Spezzatino
My mother-in-law was not a fan of stew. She told me on several occasions that stew is for people who are “too lazy to make soup”. I (respectfully) disagree with her opinion, and believe that stew is more practical for those days when I don’t have time to cut veggies into dainty little pieces to be gracefully slurped along with copious amounts of broth. Give me something thick and hearty. And sooner, rather than later!
Broiled Lobster and Grapefruit Salad
Different cultures celebrate New Year’s Day on different dates – anywhere from January to October. BUT — why not celebrate a new every day? If you use nice dishes, light a candle, and share a meal with someone you love, every day is a holiday.
Beef or Lamb Bone Broth
Miracle-working — or media hype. Trend-setting — or something your grandmother did. Bone broth has been in the health and dietary spotlight for quite a few years now. As one of the least trendy people on the planet, my name is Carlotta, and I like bone broth.
Savory Cauliflower Waffles
I have a new BFF in the morning, and a large portion of my diet has been altered. What has prompted this transformation? Cauliflower waffles, of course!
Autumn Beef Stew for Slow Cooker
I am embarrassed to admit that I actually like the shorter days of autumn. Seriously! During the long daylight hours of summer, I need to be outdoors from sunrise to sunset. When darkness hits about 6:00, I treasure evening in the cosiness of our home.
Perfectly Pressure-Cooked Chicken Breasts
If Albert Einstein’s definition of insanity is “doing the same thing over and over and expecting different results”, then my version for cooking would be “doing the same thing over and over and DREADING different results”.

June — Weddings. Graduation parties. Vacations. Family reunions. A few more weddings. And then — BABY SHOWERS. Yes! So many fun celebrations fill the month, and make it fly by quicker than 30 days of any other month.
