Light, fluffy, crispy, and delicious gluten free waffles
Ingredients
Scale
- 4 cups gluten free flour blend
- 6 Tbsp sugar
- 2 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 6 eggs
- 1 quart buttermilk
- 3/4 cup coconut oil, melted
Instructions
- Bring all ingredients to room temperature. In a large bowl, whisk together dry ingredients.
- Add eggs and buttermilk. Stir just until moistened (there will be lumps).
- Gently stir in melted oil.
- Bake in waffle iron or on a griddle as pancakes.
Notes
Cool waffles on racks, then freeze in bags, for toaster waffles.
