Moist and packed with amazing flavor, this banana bread will transport you to a grandmotherly hug
Ingredients

- 8 eggs
- 8–10 ripe bananas, mashed
- 1 1/2 c sugar
- 1 c unsweetened applesauce
- 2 tsp vanilla
- 3 c brown rice flour
- 1 c sorghum flour
- 2 tsp baking soda
- 2 tsp salt
- 2/3 c coconut oil, melted
- 2 Tbsp raw sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees.
- Bring all ingredients to room temperature. In a large bowl beat eggs lightly, then stir in mashed bananas, applesauce, sugar, and vanilla. Mixture will be somewhat lumpy.
- Stir together flours, soda and salt. Add to banana mixture, stirring until combined.
- Continue to stir as you slowly drizzle in coconut oil. Allow the batter to stand for a while.
- Divide among 4 greased bread loaf pans.
- Combine raw sugar and cinnamon, and sprinkle on the 4 loaves.
- Bake at 350 degrees for 55-60 minutes, or until toothpick inserted in the middle comes out clean.
- Cool for 10 minutes in the pans, then remove from pans to cool completely.
Notes
Peel and freeze extra bananas in zip freezer bags. Frozen bananas are a fantastic addition to smoothies, but always thaw before using bananas in baked goods.
