They all sound like corporate buzzwords, and as such, pretty annoying. But, sometimes networking is crucial to success. And makes life so much simpler. Here’s my example:

- when banking, the tellers all know me by name
- we wave at basically every person walking down Main Street
- when there’s an emergency, dozens of people show up to help
- we can stop to chat with someone in basically every aisle of the grocery store

But truly, the perks outweigh the drawbacks, unless you’re in a hurry. One great thing about a small town grocery store is that the produce manager can be a wonderful asset to “networking”. Getting to know the produce manager might mean first dibs on bananas that are no longer lovely and golden, but are showing age spots and wrinkles.
As I have already passed 60, that last comment is hitting too close to home…..
This recipe makes 4 loaves of banana bread – enough to serve for coffee break at work, enjoy for brunch on Saturday, toss one in the freezer for future brunches, and bring one to the neighbor across the street. No one will know that it’s gluten free, because the moist deliciousness will fool them all.  Â

Description
Moist and packed with amazing flavor, this banana bread will transport you to a grandmotherly hug
Ingredients
- 8 eggs
- 8–10 ripe bananas, mashed
- 1 1/2 c sugar
- 1 c unsweetened applesauce
- 2 tsp vanilla
- 3 c brown rice flour
- 1 c sorghum flour
- 2 tsp baking soda
- 2 tsp salt
- 2/3 c coconut oil, melted
- 2 Tbsp raw sugar
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees.
- Bring all ingredients to room temperature. In a large bowl beat eggs lightly, then stir in mashed bananas, applesauce, sugar, and vanilla. Mixture will be somewhat lumpy.
- Stir together flours, soda and salt. Add to banana mixture, stirring until combined.
- Continue to stir as you slowly drizzle in coconut oil. Allow the batter to stand for a while.
- Divide among 4 greased bread loaf pans.
- Combine raw sugar and cinnamon, and sprinkle on the 4 loaves.
- Bake at 350 degrees for 55-60 minutes, or until toothpick inserted in the middle comes out clean.
- Cool for 10 minutes in the pans, then remove from pans to cool completely.
Notes
Peel and freeze extra bananas in zip freezer bags. Frozen bananas are a fantastic addition to smoothies, but always thaw before using bananas in baked goods.
