Springtime in Minnesota is unpredictable, beautiful, annoying, and fickle. Admire early blooms one day, shovel snow the next. Grill and sit in the sun one day, shiver and build a fire for warmth the next.

Cauliflower Biscuits
A new star is born in our family galaxy of faves, inspired by my younger sister. Ellen is an amazing cook with 4 active teenagers to feed. Between busy schedules and special diets, Ellen has perfected healthy-food-in-a-hurry.
Barbacoa Beef Brisket for Pressure Cooker
In recent months, I have been unfaithful to my first love at Chipotle. After sampling my daughter’s barbacoa bowl, I turned my back on a long-term relationship with chicken, and have had a fling with barbacoa.
Egg and Dill Salad
Springtime. New life. Light evenings. Fresh breezes. Pussy willows. Daffodils. Campfires. And frost boil-jumping. What? Yes, that is one of my favourite activities in the spring.
Bangers & Mash
It’s St. Patrick’s Day, and people around the world claim Irish heritage. I love Irish food, but it’s even better when combined with Swedish food. What would that be called? “Sw-Irish”?
Our family has combined Irish “bangers” with Swedish “rotmos” for many years now.
Company-Sized Lasagna
‘Tis the season — for cosy sweaters, lighting candles, wearing slippers, and inviting friends over. Long, dark evenings aren’t nearly as depressing when surrounded by family and friends. Pull out a puzzle or board game, pour something tasty to drink, and share a delicious meal that was made in advance so you don’t miss a minute of the fun.
Body Butter
This looks good enough to eat! Every ingredient is food-quality so it’s safe, but it would probably taste pretty disgusting. You will be much happier if you just rub it into your hands, face, and all over your body.
Pulled Beef, Beer, and Roasted Garlic Sandwiches
Every once in a while something from my kitchen doesn’t turn out very well. A flop. Disaster. Epic failure. At those times, inevitably, one of my kids says, “You should have followed a recipe, Mom”. I did! It just wasn’t a very good recipe! But in reality, recipes are just guidelines. I seldom follow them exactly, but alter them to match the ingredients I have on hand, or according to my instinct of what will taste great.
Creamy Mexican Chicken
I love playing in the band at church. The talent on the platform each Sunday is enough to blow my mind, and we have a blast together. The only drawback is the crazy-early rehearsals.
Midwestern Teriyaki Chicken
Maybe Midwesterners have a reputation for bland food, but it’s totally not the truth. We love spicy food! This is not a Japanese teriyaki because I don’t usually have “sake” or “mirin” in the house. But there’s always Svedka vodka!
