This curry blend has become a favourite. Toasting the spices makes them more fragrant and have a rounder flavour. Use to make a wide variety of ethnic dishes, like chicken curry.

Ingredients

- 3 Tbsp cumin
- 2 Tbsp turmeric
- 2 Tbsp coriander
- 2 Tbsp ginger
- 1 Tbsp fennel
- 1 tsp mustard seeds
- 1 tsp white pepper
- 1 tsp cardamom
- 1–3 tsp chili flakes or cayenne, depending on how much heat you like
- 3 whole allspice
- 3 whole cloves
- 3 bay leaves
- 1 small cinnamon stick
Instructions
- Place all ingredients in a dry frying pan over medium heat.
- Toast spices for 6-8 minutes, or until fragrant. Don’t allow them to scorch!
- Cool completely on a plate.
- Grind in a spice mill (or if you use a coffee mill, make sure it is very clean and completely dry)
- Store in airtight container.
